Ingredients

  • 4 large bell peppers
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef or turkey over medium heat until browned.
  4. Add the cooked rice, black beans, corn, and taco seasoning to the skillet. Mix well.
  5. Stuff each bell pepper with the taco mixture.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake for 25 minutes, then remove the foil and sprinkle cheese on top.
  8. Bake for an additional 10 minutes or until the cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving.
