- 1 bag of sweet potato tater tots
- 1 cup shredded cheese (cheddar or your choice)
- 1 can black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 jalapeño, sliced
- 1 avocado, diced
- 1/2 cup sour cream or Greek yogurt
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions
- Preheat your oven according to the tater tot package instructions.
- Spread the sweet potato tater tots on a baking sheet in a single layer.
- Bake the tater tots until crispy and golden brown, as per package instructions.
- Once baked, remove the tater tots from the oven and sprinkle the shredded cheese evenly over the top.
- Add the black beans, corn, and jalapeño slices on top of the cheese.
- Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted.
- Remove from the oven and top with diced avocado, sour cream, and fresh cilantro.
- Season with salt and pepper to taste, then serve immediately.

- Feel free to customize the toppings based on your preferences.
- For a spicier version, add more jalapeños or a drizzle of hot sauce.
