Ingredients

  • 1 bag of sweet potato tater tots
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 jalapeño, sliced
  • 1 avocado, diced
  • 1/2 cup sour cream or Greek yogurt
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste


Instructions

  1. Preheat your oven according to the tater tot package instructions.
  2. Spread the sweet potato tater tots on a baking sheet in a single layer.
  3. Bake the tater tots until crispy and golden brown, as per package instructions.
  4. Once baked, remove the tater tots from the oven and sprinkle the shredded cheese evenly over the top.
  5. Add the black beans, corn, and jalapeño slices on top of the cheese.
  6. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted.
  7. Remove from the oven and top with diced avocado, sour cream, and fresh cilantro.
  8. Season with salt and pepper to taste, then serve immediately.
