Sweet and Savory Pineapple Chicken and Rice

Description

A quick and flavorful tropical-inspired skillet dinner made with juicy pineapple, tender chicken, and a sweet-savory glaze served over rice.


Ingredients

  • 1 ½ lbs boneless skinless chicken thighs or breasts, diced
  • 1 tbsp oil (avocado, sesame, or olive)
  • Salt & pepper to taste
  • 1 ½ cups canned pineapple chunks (in juice), drained – reserve ½ cup juice
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water (slurry)
  • 3 cups cooked rice (white or brown)
  • Optional toppings: chopped green onions, sesame seeds, lime wedges

Instructions

  1. Pat chicken dry and season with salt and pepper.
  2. Heat oil in a skillet over medium-high. Sear chicken 5–6 minutes until golden and cooked through. Set aside.
  3. Add pineapple to skillet and caramelize 2–3 minutes.
  4. Add garlic, soy sauce, vinegar, honey, and reserved pineapple juice. Stir and simmer.
  5. Stir in cornstarch slurry and cook until sauce thickens.
  6. Return chicken to skillet and coat in sauce.
  7. Serve over rice and top with garnishes as desired.

Notes

Swap chicken for tofu or shrimp for variation. For extra heat, add red pepper flakes or sriracha. Use tamari for a gluten-free version.
