Description

A delicious and hearty soup made with sun dried tomatoes and gnocchi, perfect for a comforting meal.


Ingredients

Scale
  • 2 cups gnocchi
  • 1 cup sun dried tomatoes, chopped
  • 4 cups vegetable broth
  • 1 cup spinach
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • Salt and pepper to taste


Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the sun dried tomatoes and cook for another 2 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the gnocchi and cook according to package instructions.
  5. Stir in the spinach and dried basil, and season with salt and pepper.
  6. Simmer for 5 minutes until the spinach is wilted.
  7. Serve hot and enjoy!
