A delicious and hearty soup made with sun dried tomatoes and gnocchi, perfect for a comforting meal.
Ingredients

- 2 cups gnocchi
- 1 cup sun dried tomatoes, chopped
- 4 cups vegetable broth
- 1 cup spinach
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the sun dried tomatoes and cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the gnocchi and cook according to package instructions.
- Stir in the spinach and dried basil, and season with salt and pepper.
- Simmer for 5 minutes until the spinach is wilted.
- Serve hot and enjoy!
