Ingredients

  • 1 package sugar cookie dough
  • 1 cup funfetti sprinkles
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Press the sugar cookie dough into the bottom of a springform pan.
  3. Sprinkle funfetti sprinkles evenly over the cookie dough.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Add the vanilla extract and mix well.
  6. Incorporate the eggs one at a time, mixing well after each addition.
  7. Stir in the sour cream until fully combined.
  8. Pour the cheesecake mixture over the crust in the springform pan.
  9. Bake for 50-60 minutes or until the center is set.
  10. Allow to cool, then refrigerate for at least 4 hours before serving.
