Description

This Stuffed Italian Meatloaf is a comforting and flavorful dish made with a hearty blend of ground beef and pork, seasoned with garlic, parmesan, and Italian herbs. Filled with roasted red peppers and gooey mozzarella, every slice delivers rich Italian-inspired flavor perfect for family dinners.


Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/2 cup chopped parsley
  • 2 cloves garlic, minced
  • 1 egg
  • 1 cup roasted red peppers, chopped
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl combine ground beef, ground pork, breadcrumbs, parmesan cheese, parsley, garlic, egg, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Flatten the meat mixture into a rectangle on a sheet of parchment paper.
  4. Spread chopped roasted red peppers and shredded mozzarella cheese over the meat.
  5. Roll the meat mixture into a log shape, sealing the ends.
  6. Place the meatloaf in a baking dish and pour marinara sauce over the top.
  7. Bake for 60–75 minutes or until fully cooked.
  8. Let the meatloaf rest for several minutes before slicing and serving.

Notes

Do not overmix the meat mixture to keep the meatloaf tender. Allow the meatloaf to rest before slicing so the juices redistribute. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
