- 2 cups grilled or roasted chicken, diced
- 1 cup sweet corn, grilled or canned
- 1 large cucumber, diced
- ½ cup red onion, finely chopped
- ½ cup mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon cilantro, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon salt (to taste)
- ½ teaspoon black pepper
- Optional: crumbled feta cheese for garnish
Instructions
- Gather all ingredients and have them ready for preparation.
- Dice the grilled or roasted chicken into bite-sized pieces.
- Prepare the sweet corn by grilling or draining it if canned.
- Chop the large cucumber into small, even dice.
- Finely chop the red onion for a flavorful crunch.
- Combine in a large bowl the diced chicken, sweet corn, cucumber, and red onion.
- Whisk together in a separate bowl the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper.
- Pour the dressing over the salad ingredients and gently mix until everything is well-coated.
- Garnish with crumbled feta cheese if desired.
- Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld together.
Notes
This salad can be made a day in advance. Just leave off the dressing until serving to maintain the crispness.
