Ingredients

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish


Instructions

  1. Gather all ingredients and have them ready for preparation.
  2. Dice the grilled or roasted chicken into bite-sized pieces.
  3. Prepare the sweet corn by grilling or draining it if canned.
  4. Chop the large cucumber into small, even dice.
  5. Finely chop the red onion for a flavorful crunch.
  6. Combine in a large bowl the diced chicken, sweet corn, cucumber, and red onion.
  7. Whisk together in a separate bowl the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper.
  8. Pour the dressing over the salad ingredients and gently mix until everything is well-coated.
  9. Garnish with crumbled feta cheese if desired.
  10. Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld together.

Notes
