Description

A flavorful and hearty casserole combining street corn and chicken for a delightful meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) street corn
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup crushed tortilla chips (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, street corn, cream cheese, cheddar cheese, sour cream, red onion, cilantro, chili powder, garlic powder, salt, and pepper.
  3. Mix until all ingredients are well combined.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Spread the mixture evenly in the dish.
  6. Top with crushed tortilla chips.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  8. Let it cool for a few minutes before serving.
