- 1 cup strawberries, diced
- 1 vanilla bean, seeds scraped
- 1/2 cup heavy cream
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Fold in the diced strawberries and scraped vanilla bean seeds gently.
- Whisk together the heavy cream, egg, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Turn the dough out onto a lightly floured surface and gently knead a few times to bring it together.
- Pat the dough into a circle about 1 inch thick and cut into wedges.
- Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
- Allow to cool slightly before serving.
Notes
For best texture, use cold ingredients and avoid overmixing the dough.
