Description

Delightful bars featuring a blend of sweet strawberries and tart rhubarb, cradled in a buttery crumb crust.


Ingredients

  • 2 cups chopped strawberries
  • 2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed


Instructions

  1. Preheat oven to 350°F and prepare a 9×13 baking pan.
  2. Mix strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice in a bowl; set aside.
  3. Combine flour, oats, brown sugar, cinnamon, baking powder, and salt in a separate bowl.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Press two-thirds of the crumb mixture into the pan to form the crust.
  6. Spread the fruit filling evenly over the crust.
  7. Sprinkle the remaining crumb mixture on top.
  8. Bake for 40–45 minutes.
  9. Let cool completely before slicing into bars.

Notes

Use fresh strawberries and rhubarb for best flavor. Chill the butter for a flaky texture.
