- 2½ cups all-purpose flour
- 1 tbsp sugar
- ½ tsp salt
- 1 cup cold unsalted butter, cubed
- 6–8 tbsp ice water
- ¾ cup smooth strawberry jam
- 1 tbsp cornstarch (optional)
- 1 cup powdered sugar
- 1½ tbsp milk
- ¼ tsp vanilla extract
- Rainbow sprinkles
Instructions
- In a bowl, mix flour, sugar, and salt. Cut in butter until crumbly. Add water until dough forms. Chill 30 minutes.
- Roll half of the dough into a 9×13-inch rectangle. Place on a baking sheet.
- Spread jam evenly, leaving a ½-inch border. Top with second dough layer. Crimp edges and cut vents.
- Chill assembled pie for 10 minutes, then bake at 375°F for 30–35 minutes or until golden.
- Let cool. Mix powdered sugar, milk, and vanilla. Spread over cooled pie. Add sprinkles and let set 20 minutes.
Notes
You can freeze this pie before or after baking. To reheat, place slices in a 300°F oven for 5–8 minutes.
