Description

A delicious and easy recipe for strawberry oatmeal bars topped with a crunchy crumble, perfect for satisfying your sweet tooth.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a large bowl, combine rolled oats, flour, brown sugar, granulated sugar, melted butter, vanilla extract, and salt. Mix until crumbly.
  3. Press half of the oat mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, mix chopped strawberries with lemon juice and cornstarch. Spread the strawberry mixture over the crust.
  5. Sprinkle the remaining oat mixture over the strawberries to create the crumble topping.
  6. Bake for 30-35 minutes or until the top is golden brown.
  7. Allow to cool before cutting into bars and serving.

Notes

  • These bars can be frozen for up to 3 months.
