- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh strawberries, chopped
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a large bowl, combine rolled oats, flour, brown sugar, granulated sugar, melted butter, vanilla extract, and salt. Mix until crumbly.
- Press half of the oat mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, mix chopped strawberries with lemon juice and cornstarch. Spread the strawberry mixture over the crust.
- Sprinkle the remaining oat mixture over the strawberries to create the crumble topping.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars and serving.
Notes
- Store leftovers in an airtight container in the refrigerator.
- These bars can be frozen for up to 3 months.
- Feel free to substitute other fruits like blueberries or raspberries.
