Description

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh strawberries, diced
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the diced strawberries and lemon zest.
  5. Mix the heavy cream and vanilla extract in a separate bowl.
  6. Add the cream mixture to the dry ingredients and stir until just combined.
  7. Turn the dough out onto a floured surface and knead gently.
  8. Pat the dough into a circle about 1-inch thick.
  9. Cut into wedges or use a round cutter to cut into scones and place on a baking sheet.
  10. Bake for 15-20 minutes or until golden brown.
  11. Allow to cool slightly before serving.

Notes

For a unique twist, add a pinch of cardamom or almond extract. Store in an airtight container for up to 2 days or freeze for up to one month.
