- 1 cup fresh strawberries, diced

- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the flour, sugar, baking powder, and salt in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the diced strawberries and lemon zest.
- Mix the heavy cream and vanilla extract in a separate bowl.
- Add the cream mixture to the dry ingredients and stir until just combined.
- Turn the dough out onto a floured surface and knead gently.
- Pat the dough into a circle about 1-inch thick.
- Cut into wedges or use a round cutter to cut into scones and place on a baking sheet.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
For a unique twist, add a pinch of cardamom or almond extract. Store in an airtight container for up to 2 days or freeze for up to one month.
