Ingredients

  • 1 cup fresh strawberries, pureed


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the pureed strawberries until evenly distributed.
  7. Chill the dough in the refrigerator for about 30 minutes.
  8. Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
  9. Roll each ball in powdered sugar to coat.
  10. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  11. Bake for 10-12 minutes or until the edges are set and the tops are crinkled.
  12. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
