- 1 cup fresh strawberries, chopped
- ½ cup cream cheese, softened
- ½ cup sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract

- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup brown sugar
- ¼ cup rolled oats
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, baking powder, baking soda, and salt.
- In another bowl, beat together the sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped strawberries and cream cheese until evenly distributed.
- In a separate bowl, combine brown sugar, rolled oats, and melted butter to make the streusel topping.
- Fill each muffin cup with the batter and sprinkle the streusel topping generously over each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
