  • 1 teaspoon sesame oil

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Add the eggplant pieces and stir-fry for about 5-7 minutes until they start to soften.
  4. Incorporate the sliced bell pepper and continue to stir-fry for another 3-4 minutes.
  5. Pour in the soy sauce, oyster sauce, and sesame oil, stirring well to combine.
  6. Season with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes until everything is well coated and heated through.
  8. Garnish with chopped green onions before serving.
