- 12 ounces rigatoni pasta
- 1 pound steak (sirloin or ribeye), cut into bite-sized pieces
- 1 cup blue cheese, crumbled
- 2 cups spinach (fresh or frozen)
- 1/2 cup heavy cream
- 1 cup beef broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the rigatoni according to package instructions until al dente, then drain.
- In a large skillet, heat olive oil over medium-high heat. Add the steak pieces and season with salt and pepper. Cook until browned and cooked to your liking. Remove from pan and set aside.
- In the same skillet, add the spinach and cook until wilted.
- In a large mixing bowl, combine the cooked rigatoni, steak, wilted spinach, blue cheese, heavy cream, and beef broth. Mix well.
- Transfer the mixture to a greased baking dish and sprinkle Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Garnish with chopped parsley before serving, if desired.
