Delightful and fresh spring rolls filled with vibrant vegetables, served with a creamy peanut sauce.
Ingredients
- Rice paper wrappers
- Lettuce leaves
- Carrots, julienned
- Cucumber, julienned
- Bell peppers, sliced
- Fresh herbs (mint, cilantro, or basil)
- Peanut butter
- Soy sauce
- Lime juice
- Garlic, minced
- Water
Instructions
- Prepare all your fresh vegetables and herbs by washing and cutting them into thin strips.
- Soak a rice paper wrapper in warm water for about 10-15 seconds until it’s soft.
- Lay the softened wrapper on a clean surface.
- Place a lettuce leaf in the center of the wrapper, followed by a handful of your assorted vegetables and herbs.
- Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top.
- Repeat the process until all the ingredients are used.
- Mix together peanut butter, soy sauce, lime juice, minced garlic, and a little water in a bowl to achieve a smooth consistency for the peanut sauce.
- Serve the spring rolls with the peanut dipping sauce.
Notes
These rolls are best enjoyed fresh but can be stored in the fridge for up to 2 days.
