Description

Delightful and fresh spring rolls filled with vibrant vegetables, served with a creamy peanut sauce.


Ingredients

  • Rice paper wrappers
  • Lettuce leaves
  • Carrots, julienned
  • Cucumber, julienned
  • Bell peppers, sliced
  • Fresh herbs (mint, cilantro, or basil)
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Garlic, minced
  • Water


Instructions

  1. Prepare all your fresh vegetables and herbs by washing and cutting them into thin strips.
  2. Soak a rice paper wrapper in warm water for about 10-15 seconds until it’s soft.
  3. Lay the softened wrapper on a clean surface.
  4. Place a lettuce leaf in the center of the wrapper, followed by a handful of your assorted vegetables and herbs.
  5. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top.
  6. Repeat the process until all the ingredients are used.
  7. Mix together peanut butter, soy sauce, lime juice, minced garlic, and a little water in a bowl to achieve a smooth consistency for the peanut sauce.
  8. Serve the spring rolls with the peanut dipping sauce.

Notes

These rolls are best enjoyed fresh but can be stored in the fridge for up to 2 days.
