Ingredients
- Rice noodles

Instructions
- Cook rice noodles according to package instructions and drain.
- Combine in a large bowl the cooked rice noodles, cucumber, purple cabbage, carrot, bell pepper, fresh herbs, and peanuts.
- Whisk together in a separate bowl peanut butter, soy sauce, lime juice, honey, garlic, and ginger to make the dressing.
- Pour the dressing over the salad and toss to combine.
