Description

A vibrant and refreshing Spring Roll Salad packed with colorful vegetables, fresh herbs, and a savory peanut dressing.


Ingredients

  • Rice noodles
  • Cucumber
  • Purple cabbage
  • Carrot
  • Bell pepper
  • Fresh herbs (mint, cilantro)
  • Crunchy peanuts
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Honey or maple syrup
  • Garlic
  • Ginger


Instructions

  1. Cook rice noodles according to package instructions and drain.
  2. Combine in a large bowl the cooked rice noodles, cucumber, purple cabbage, carrot, bell pepper, fresh herbs, and peanuts.
  3. Whisk together in a separate bowl peanut butter, soy sauce, lime juice, honey, garlic, and ginger to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately or chill until ready to serve.

Notes
