Ingredients

  • 1 package of puff pastry (thawed)
  • 2 cups fresh spinach (chopped)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste
  • Olive oil (for drizzling)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut into tree shapes.
  3. In a bowl, mix the chopped spinach, ricotta cheese, Parmesan cheese, salt, and pepper.
  4. Place a spoonful of the spinach mixture on each pastry tree shape.
  5. Fold the edges of the pastry over the filling to create a tree shape.
  6. Brush the tops with the beaten egg for a golden finish.
  7. Drizzle with olive oil and place on a baking sheet.
  8. Bake for 15-20 minutes or until golden brown.
