Description

A delicious and nutritious breakfast casserole packed with spinach and mushrooms, perfect for a hearty morning meal.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the mushrooms until they are soft.
  3. Add the chopped spinach to the skillet and cook until wilted.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  5. Stir in the sautéed spinach and mushrooms, and half of the cheese.
  6. Pour the mixture into a greased baking dish.
  7. Top with the remaining cheese.
  8. Bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
  9. Let it cool for a few minutes before slicing and serving.
