Description

A delightful casserole blending spinach, artichokes, and chicken in a creamy and nutritious bake.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup fresh spinach, chopped
  • 1 can artichoke hearts, drained and chopped
  • 1 cup Greek yogurt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, chopped spinach, artichoke hearts, Greek yogurt, mozzarella cheese, Parmesan cheese, garlic, onion powder, salt, and pepper in a large mixing bowl.
  3. Spray a baking dish with olive oil spray and spread the mixture evenly in the dish.
  4. Bake for 25-30 minutes, until heated through and bubbly.
  5. Serve warm, and enjoy!

Notes

For extra creaminess, blend in a bit of cream cheese. Add red pepper flakes for a kick.
