A delightful casserole blending spinach, artichokes, and chicken in a creamy and nutritious bake.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup fresh spinach, chopped
- 1 can artichoke hearts, drained and chopped
- 1 cup Greek yogurt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, chopped spinach, artichoke hearts, Greek yogurt, mozzarella cheese, Parmesan cheese, garlic, onion powder, salt, and pepper in a large mixing bowl.
- Spray a baking dish with olive oil spray and spread the mixture evenly in the dish.
- Bake for 25-30 minutes, until heated through and bubbly.
- Serve warm, and enjoy!
Notes
For extra creaminess, blend in a bit of cream cheese. Add red pepper flakes for a kick.
