- 4 large potatoes, peeled and diced
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 2 cloves garlic, minced
- 1 tbsp lime juice
- Fresh cilantro, chopped (for garnish)
Instructions
- Dice the peeled potatoes into 1-inch cubes.
- Heat 1 tbsp vegetable oil in a large skillet over medium-high heat.
- Add the potatoes and cook, stirring occasionally, until tender and golden brown (15-20 min).
- In a small bowl, combine salt, smoked paprika, chili powder, cumin, and cayenne pepper.
- Add the remaining 1 tbsp vegetable oil and minced garlic to the skillet; cook for 1 minute until fragrant.
- Sprinkle the spice mixture over the potatoes; toss to coat and cook for an additional 2-3 minutes, ensuring spices are toasted but not burnt.
- Remove from heat and stir in lime juice until well mixed.
- Garnish with fresh cilantro and serve warm.
Notes
For extra crispiness, pre-soak your potatoes in cold water. Adjust spices according to your taste.
