Description

Deliciously crispy and fluffy Spicy Mexican Street Potatoes, packed with bold flavors from paprika, cayenne, and cumin.


Ingredients

  • 4 large potatoes, peeled and diced
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Dice the peeled potatoes into 1-inch cubes.
  2. Heat 1 tbsp vegetable oil in a large skillet over medium-high heat.
  3. Add the potatoes and cook, stirring occasionally, until tender and golden brown (15-20 min).
  4. In a small bowl, combine salt, smoked paprika, chili powder, cumin, and cayenne pepper.
  5. Add the remaining 1 tbsp vegetable oil and minced garlic to the skillet; cook for 1 minute until fragrant.
  6. Sprinkle the spice mixture over the potatoes; toss to coat and cook for an additional 2-3 minutes, ensuring spices are toasted but not burnt.
  7. Remove from heat and stir in lime juice until well mixed.
  8. Garnish with fresh cilantro and serve warm.

Notes

For extra crispiness, pre-soak your potatoes in cold water. Adjust spices according to your taste.
