Instructions
- In a large bowl, combine corn, red bell pepper, and cilantro.
- Add chili powder, cayenne pepper, garlic powder, salt, and black pepper. Mix well.
- If using, fold in shredded cheese.
- In a separate bowl, whisk together mayonnaise and lime juice.
- Pour the mayonnaise mixture over the corn mixture and stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold as a dip or on tortilla chips.
Notes
