Ingredients

  • 2 cups corn kernels
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon chili powder

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice


Instructions

  1. In a large bowl, combine corn, red bell pepper, and cilantro.
  2. Add chili powder, cayenne pepper, garlic powder, salt, and black pepper. Mix well.
  3. If using, fold in shredded cheese.
  4. In a separate bowl, whisk together mayonnaise and lime juice.
  5. Pour the mayonnaise mixture over the corn mixture and stir until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Serve cold as a dip or on tortilla chips.

Notes

  • Adjust the spice level by adding more or less cayenne pepper.
