Ingredients

- 2 large cucumbers
- 1 tablespoon salt
- 1 tablespoon sugar
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon chili flakes
- 2 green onions, chopped
- 1 tablespoon sesame oil
Instructions
- Slice the cucumbers thinly and place them in a bowl.
- Sprinkle salt over the cucumbers and let them sit for 10 minutes to draw out excess water.
- In a separate bowl, mix together sugar, rice vinegar, soy sauce, chili flakes, and sesame oil.
- Drain the cucumbers and rinse them under cold water.
- Add the cucumbers to the dressing and toss to combine.
- Garnish with chopped green onions before serving.
Notes
- For extra heat, add more chili flakes to taste.
- This salad can be made a few hours in advance for the flavors to meld.
