Spicy Cucumber Salad

Description

A refreshing and zesty salad that adds a kick to your summer meals.


Ingredients

Scale
  • 2 large cucumbers
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon chili flakes
  • 2 green onions, chopped
  • 1 tablespoon sesame oil

Instructions

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Sprinkle salt over the cucumbers and let them sit for 10 minutes to draw out excess water.
  3. In a separate bowl, mix together sugar, rice vinegar, soy sauce, chili flakes, and sesame oil.
  4. Drain the cucumbers and rinse them under cold water.
  5. Add the cucumbers to the dressing and toss to combine.
  6. Garnish with chopped green onions before serving.

Notes

  • For extra heat, add more chili flakes to taste.
  • This salad can be made a few hours in advance for the flavors to meld.
