- 1 can (13.5 oz) coconut milk
- 2 tablespoons red curry paste
- 2 cups vegetable broth
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- 1 tablespoon soy sauce
- Salt to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Combine the vegetable broth and coconut milk in a large pot, and bring to a simmer over medium heat.
- Stir in the red curry paste and soy sauce until well mixed.
- Add the mixed vegetables and noodles, and cook according to noodle package instructions until the noodles are tender.
- Taste and add salt if needed.
- Serve hot, garnished with fresh cilantro and lime wedges.
