Description

A comforting and quick ramen recipe combining the rich flavors of coconut milk and red curry for a deliciously spicy broth.


Ingredients

  • 2 cups ramen noodles
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 2 cups vegetable broth
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 1 tablespoon soy sauce
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. Combine the vegetable broth and coconut milk in a large pot, and bring to a simmer over medium heat.
  2. Stir in the red curry paste and soy sauce until well mixed.
  3. Add the mixed vegetables and noodles, and cook according to noodle package instructions until the noodles are tender.
  4. Taste and add salt if needed.
  5. Serve hot, garnished with fresh cilantro and lime wedges.
