Spiced Pumpkin Waffles are golden, fluffy, and filled with warm autumn spices. The perfect fall breakfast or holiday brunch treat.
Ingredients

- 1 1/2 cups all-purpose flour
- 3 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp ground ginger
- 1 pinch salt
- 2 large eggs
- 1/4 cup brown sugar (packed)
- 1 cup canned pumpkin puree
- 1 to 1 2/3 cups milk (start with 1 cup, add more if needed)
- 4 tbsp butter, melted and cooled
Instructions
- Whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a bowl.
- In another bowl, whisk eggs, brown sugar, pumpkin puree, milk, and melted butter.
- Fold dry ingredients into wet mixture until just combined.
- Pour batter into preheated waffle iron (about 1 cup batter per Belgian waffle).
- Cook 4–5 minutes until golden brown and crisp.
- Serve hot with maple syrup, whipped cream, or toppings of choice.
Notes
Store leftovers in the fridge for 3 days or freeze up to 2 months. Reheat in a toaster or oven for crisp edges.
