Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 pound fresh spinach, washed and chopped
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic, cumin, and paprika; cook for another minute.
  4. Add chickpeas and cook for 5 minutes, stirring occasionally.
  5. Add chopped spinach and cook until wilted.
  6. Season with salt, pepper, and lemon juice before serving.
