Description

Learn how to make authentic Spanish rice that is flavorful and easy to prepare at home.


Ingredients

Scale
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and bell pepper, sauté until softened.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add the rice and toast it for about 2-3 minutes, stirring frequently.
  5. Pour in the chicken broth and add the diced tomatoes, paprika, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat to low and cover the skillet.
  7. Simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
  8. Fluff the rice with a fork and serve hot.

Notes

  • For a spicier version, add diced jalapeños.
  • Can be served as a side dish or as a base for other dishes.
  • Leftovers can be stored in the refrigerator for up to 3 days.
