Ingredients

- 2 cups long-grain rice
- 4 cups chicken broth
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and bell pepper, sauté until softened.
- Stir in minced garlic and cook for an additional minute.
- Add the rice and toast it for about 2-3 minutes, stirring frequently.
- Pour in the chicken broth and add the diced tomatoes, paprika, cumin, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover the skillet.
- Simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
- Fluff the rice with a fork and serve hot.
Notes
- For a spicier version, add diced jalapeños.
- Can be served as a side dish or as a base for other dishes.
- Leftovers can be stored in the refrigerator for up to 3 days.
