Description

A delightful and creamy pasta dish featuring spinach and sun-dried tomatoes, perfect for a spring dinner.


Ingredients

Scale
  • 8 oz spaghetti
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Cook the spaghetti according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add the sun-dried tomatoes and cook for 2-3 minutes.
  4. Stir in the heavy cream and bring to a simmer.
  5. Add the spinach and cook until wilted.
  6. Mix in the Parmesan cheese and season with salt and pepper.
  7. Combine the cooked spaghetti with the sauce and toss to coat.
  8. Serve warm and enjoy!
