Description

A vibrant and hearty pasta salad filled with lively veggies and zesty dressing, perfect for any gathering.


Ingredients

  • 2 cups cooked pasta
  • 1 cup bell peppers (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup corn (canned or frozen)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste


Instructions

  1. Combine in a large bowl cooked pasta, bell peppers, cherry tomatoes, corn, red onion, and cilantro.
  2. Whisk together in a separate small bowl olive oil, lime juice, taco seasoning, salt, and pepper.
  3. Pour the dressing over the pasta and vegetables, tossing to combine.
  4. Serve immediately or chill in the refrigerator for an hour before serving.
