Ingredients

Scale
  • 2 cups of brown rice
  • 1 pound of chicken breasts
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • 1 can of diced tomatoes with green chilies
  • 1 packet of taco seasoning
  • 4 cups of chicken broth
  • 1 cup of shredded cheese (optional)
  • Fresh cilantro for garnish (optional)


Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the brown rice, black beans, corn, diced tomatoes, and taco seasoning on top of the chicken.
  3. Pour the chicken broth over all the ingredients in the crock pot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and mix everything together.
  6. Top with shredded cheese and cilantro if desired before serving.

Notes

  • For a spicier dish, add jalapeños or use spicy taco seasoning.
  • This recipe can be made with brown or white rice, but cooking times may vary.
  • Leftovers can be stored in the refrigerator for up to 3 days.
