Description

A delightful recipe that combines the rich flavors of smoked sockeye salmon with fresh pasta and vegetables.


Ingredients

  • 8 oz pasta (your choice)
  • 6 oz smoked sockeye salmon, flaked
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup capers, rinsed
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, smoked sockeye salmon, cherry tomatoes, cucumber, red onion, capers, and dill.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add other vegetables like bell peppers or spinach.
  • This salad can be made a day in advance for better flavor.
