- 8 oz pasta (your choice)
- 6 oz smoked sockeye salmon, flaked
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup capers, rinsed
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, smoked sockeye salmon, cherry tomatoes, cucumber, red onion, capers, and dill.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
