Instructions
- Preheat your oven to 400°F (200°C).
- Peel and trim the carrots, then place them in a pot of boiling water for about 10 minutes until tender.
- Drain the carrots and place them on a baking sheet.
- Using a fork or a potato masher, gently smash the carrots to flatten them slightly.
- Drizzle olive oil over the smashed carrots and season with salt and pepper.
- Bake in the preheated oven for 15-20 minutes until they are golden and crispy.
- Remove from the oven and sprinkle with fresh parsley before serving.
