Description

A delightful and easy-to-make side dish featuring smashed carrots that are both flavorful and visually appealing.


Ingredients

Scale
  • 1 pound of carrots
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and trim the carrots, then place them in a pot of boiling water for about 10 minutes until tender.
  3. Drain the carrots and place them on a baking sheet.
  4. Using a fork or a potato masher, gently smash the carrots to flatten them slightly.
  5. Drizzle olive oil over the smashed carrots and season with salt and pepper.
  6. Bake in the preheated oven for 15-20 minutes until they are golden and crispy.
  7. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • For added flavor, consider adding garlic or herbs of your choice.
  • These carrots can be served warm or at room temperature.
