- 2 lbs beef chuck roast
- 4 tablespoons garlic butter
- 1 lb baby potatoes, halved
- 1 onion, chopped
- 2 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- In a slow cooker, place the chopped onion and halved baby potatoes at the bottom.
- Season the beef chuck roast with salt, pepper, thyme, and rosemary.
- Place the seasoned beef on top of the potatoes and onions.
- Pour the beef broth over the beef and vegetables.
- Add the garlic butter on top of the beef.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
- Once cooked, shred the beef and mix it with the potatoes and broth before serving.
Notes
- For extra flavor, you can add carrots or other vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
