Description

A delicious and easy recipe for tender beef cooked in garlic butter with potatoes, perfect for a comforting meal.


Ingredients

  • 2 lbs beef chuck roast
  • 4 tablespoons garlic butter
  • 1 lb baby potatoes, halved
  • 1 onion, chopped
  • 2 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary


Instructions

  1. In a slow cooker, place the chopped onion and halved baby potatoes at the bottom.
  2. Season the beef chuck roast with salt, pepper, thyme, and rosemary.
  3. Place the seasoned beef on top of the potatoes and onions.
  4. Pour the beef broth over the beef and vegetables.
  5. Add the garlic butter on top of the beef.
  6. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  7. Once cooked, shred the beef and mix it with the potatoes and broth before serving.

Notes

  • For extra flavor, you can add carrots or other vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days.
