Description

A hearty and flavorful cowboy casserole made effortlessly in a slow cooker.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cups frozen tater tots


Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked; drain excess fat.
  2. Add the cooked beef to the slow cooker along with black beans, corn, diced tomatoes, taco seasoning, onion, and bell pepper.
  3. Stir to combine all ingredients well.
  4. Top the mixture with frozen tater tots and sprinkle shredded cheddar cheese on top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooked, serve hot and enjoy your cowboy casserole!

  • Feel free to add other vegetables like zucchini or mushrooms for extra nutrition.
