- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup diced onion
- 1 cup diced bell pepper
- 2 cups frozen tater tots
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked; drain excess fat.
- Add the cooked beef to the slow cooker along with black beans, corn, diced tomatoes, taco seasoning, onion, and bell pepper.
- Stir to combine all ingredients well.
- Top the mixture with frozen tater tots and sprinkle shredded cheddar cheese on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, serve hot and enjoy your cowboy casserole!
Notes
- Feel free to add other vegetables like zucchini or mushrooms for extra nutrition.
- For a spicier version, add jalapeños or use spicy taco seasoning.
