Description

A simple and delicious recipe for making tender corned beef in a slow cooker.


Ingredients

Scale
  • 4 pounds corned beef brisket
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 1 teaspoon allspice berries
  • 4 carrots, cut into chunks
  • 4 potatoes, quartered


Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add the onion, garlic, and beef broth.
  3. Sprinkle the brown sugar, mustard seeds, black peppercorns, and allspice berries over the meat.
  4. Cover and cook on low for 8-10 hours or until the meat is tender.
  5. In the last 2 hours of cooking, add the carrots and potatoes.
  6. Once done, remove the meat and let it rest before slicing.
  7. Serve with the vegetables and broth.

Notes

  • For extra flavor, you can add a bay leaf to the broth.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This recipe can be easily doubled for larger gatherings.
