A simple and delicious recipe for making tender corned beef in a slow cooker.
Ingredients

- 4 pounds corned beef brisket
- 1 onion, quartered
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons brown sugar
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 1 teaspoon allspice berries
- 4 carrots, cut into chunks
- 4 potatoes, quartered
Instructions
- Place the corned beef brisket in the slow cooker.
- Add the onion, garlic, and beef broth.
- Sprinkle the brown sugar, mustard seeds, black peppercorns, and allspice berries over the meat.
- Cover and cook on low for 8-10 hours or until the meat is tender.
- In the last 2 hours of cooking, add the carrots and potatoes.
- Once done, remove the meat and let it rest before slicing.
- Serve with the vegetables and broth.
Notes
- For extra flavor, you can add a bay leaf to the broth.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This recipe can be easily doubled for larger gatherings.
