- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup uncooked pasta (such as penne or rotini)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Place the chicken breasts in the slow cooker.
- Add the chicken broth, diced tomatoes, carrots, celery, onion, garlic, basil, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the slow cooker.
- Add the uncooked pasta and stir to combine.
- Cover and cook for an additional 30 minutes, or until the pasta is tender.
- Stir in the mozzarella and Parmesan cheese just before serving.
Notes
- Feel free to add other vegetables like bell peppers or spinach.
- For a spicier version, add red pepper flakes.
- This soup can be stored in the refrigerator for up to 3 days.
