Description

A vibrant and refreshing Shrimp Ceviche recipe that highlights the sweet flavors of shrimp marinated in zesty lime juice, perfect for gatherings and warm days.


Ingredients

  • 12 ounces cooked shrimp, peeled, deveined, tail removed
  • ½ cup fresh lime juice
  • 2 Roma tomatoes, diced
  • 1 medium red onion, diced
  • 2 medium jalapeno peppers, seeded and diced
  • ¼ cup cilantro, chopped
  • 2 green onions, diced
  • ¼ teaspoon kosher salt


Instructions

  1. Chop the cooked shrimp into bite-sized pieces and place them in a mixing bowl.
  2. Pour fresh lime juice over the shrimp and toss gently to coat. Let it marinate for about 10 minutes.
  3. Add diced tomatoes, red onion, jalapenos, cilantro, green onions, and kosher salt to the bowl. Mix well until combined.
  4. Cover the bowl with plastic wrap and refrigerate for 30 minutes to an hour to let flavors meld.
  5. Serve chilled with crispy tortilla chips or in lettuce cups.
