Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix harissa paste, orange zest, orange juice, olive oil, salt, and pepper.
- Toss the chicken thighs in the marinade until well coated.
- On a sheet pan, arrange the marinated chicken, onion, bell pepper, and carrots.
- Roast in the oven for 30-35 minutes or until the chicken is cooked through.
- Garnish with fresh cilantro before serving.
