Ingredients

  • 2 tablespoons harissa paste
  • 1 orange, zested and juiced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red onion, cut into wedges
  • 1 bell pepper, sliced
  • 1 cup baby carrots
  • Fresh cilantro for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix harissa paste, orange zest, orange juice, olive oil, salt, and pepper.
  3. Toss the chicken thighs in the marinade until well coated.
  4. On a sheet pan, arrange the marinated chicken, onion, bell pepper, and carrots.
  5. Roast in the oven for 30-35 minutes or until the chicken is cooked through.
  6. Garnish with fresh cilantro before serving.
