Description

Sayur Lodeh is a traditional Indonesian vegetable soup that is rich in flavors and offers a warm, comforting experience.


Ingredients

Scale
  • 1 liter coconut milk
  • 200 grams of mixed vegetables (carrots, green beans, cabbage)
  • 100 grams of tofu, cubed
  • 2 tablespoons of vegetable oil
  • 3 cloves of garlic, minced
  • 2 shallots, sliced
  • 1 tablespoon of shrimp paste
  • 1 teaspoon of turmeric powder
  • Salt to taste
  • Chili peppers to taste

Instructions

  1. Heat the vegetable oil in a pot over medium heat.
  2. Sauté the minced garlic and sliced shallots until fragrant.
  3. Add the shrimp paste and turmeric powder, stirring well.
  4. Pour in the coconut milk and bring to a gentle simmer.
  5. Add the mixed vegetables and tofu, cooking until the vegetables are tender.
  6. Season with salt and chili peppers to taste.
  7. Serve hot with rice or as a standalone dish.

Notes

  • Feel free to adjust the vegetables based on your preference.
  • This dish can be made vegan by omitting the shrimp paste or using a vegan alternative.
