- 200 grams of mixed vegetables (carrots, green beans, cabbage)
- 100 grams of tofu, cubed
- 2 tablespoons of vegetable oil
- 3 cloves of garlic, minced
- 2 shallots, sliced
- 1 tablespoon of shrimp paste
- 1 teaspoon of turmeric powder
- Salt to taste
- Chili peppers to taste
Instructions
- Heat the vegetable oil in a pot over medium heat.
- Sauté the minced garlic and sliced shallots until fragrant.
- Add the shrimp paste and turmeric powder, stirring well.
- Pour in the coconut milk and bring to a gentle simmer.
- Add the mixed vegetables and tofu, cooking until the vegetables are tender.
- Season with salt and chili peppers to taste.
- Serve hot with rice or as a standalone dish.
