A delightful twist on classic scampi, this Savory Shrimp Scampi Orzo combines succulent shrimp with orzo pasta for a flavor-packed meal.


Ingredients

  • 1 lb large shrimp
  • 2 Tbsp extra-virgin olive oil
  • 1 pcs lemon
  • 5 cloves garlic
  • Kosher salt and freshly ground pepper
  • 4 Tbsp butter
  • 1/3 cup minced shallots
  • A pinch crushed red pepper flakes
  • 1/3 cup dry white wine
  • 1 cup dry orzo pasta
  • 1/4 cup chopped fresh parsley
  • 2 Tbsp chopped fresh chives


Instructions

  1. Toss the shrimp with olive oil, lemon zest, kosher salt, and freshly ground pepper in a bowl, ensuring they’re evenly coated.
  2. In a large skillet, melt butter over medium heat. Add the seasoned shrimp and sauté until they turn opaque and pink (about 3-4 minutes). Once done, remove and set them aside.
  3. In the same skillet, add the remaining butter and olive oil, then toss in the minced garlic and shallots, along with crushed red pepper flakes. Cook until fragrant, about 3 minutes.
  4. Stir in the dry orzo, allowing it to toast slightly for 1-2 minutes. Next, pour in the dry white wine, stirring well and letting it reduce for about 2 minutes.
  5. Pour in 2 cups of water, bring it to a simmer, and cook until the orzo is al dente (approximately 12 minutes). Once cooked, fold in the shrimp and chopped herbs.
  6. Serve the shrimp scampi orzo with fresh lemon wedges and a drizzle of olive oil for an extra touch of brightness. Enjoy!
