- 1 lb large shrimp
- 2 Tbsp extra-virgin olive oil
- 1 pcs lemon
- 5 cloves garlic
- Kosher salt and freshly ground pepper
- 4 Tbsp butter
- 1/3 cup minced shallots
- A pinch crushed red pepper flakes
- 1/3 cup dry white wine
- 1 cup dry orzo pasta
- 1/4 cup chopped fresh parsley
- 2 Tbsp chopped fresh chives
Instructions
- Toss the shrimp with olive oil, lemon zest, kosher salt, and freshly ground pepper in a bowl, ensuring they’re evenly coated.
- In a large skillet, melt butter over medium heat. Add the seasoned shrimp and sauté until they turn opaque and pink (about 3-4 minutes). Once done, remove and set them aside.
- In the same skillet, add the remaining butter and olive oil, then toss in the minced garlic and shallots, along with crushed red pepper flakes. Cook until fragrant, about 3 minutes.
- Stir in the dry orzo, allowing it to toast slightly for 1-2 minutes. Next, pour in the dry white wine, stirring well and letting it reduce for about 2 minutes.
- Pour in 2 cups of water, bring it to a simmer, and cook until the orzo is al dente (approximately 12 minutes). Once cooked, fold in the shrimp and chopped herbs.
- Serve the shrimp scampi orzo with fresh lemon wedges and a drizzle of olive oil for an extra touch of brightness. Enjoy!
