Description

Ingredients

  • 4 pieces Boneless, skinless chicken breasts (or chicken thighs)
  • 1 cup Pepperoncini peppers
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 2 tablespoons Extra virgin olive oil
  • 1 cup Low-sodium chicken broth
  • 1/2 cup Heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Red pepper flakes
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Fresh parsley
  • 2 cups Cooked pasta or rice


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken with salt, pepper, and Italian seasoning.
  3. Add the chicken to the skillet and cook until browned, about 5-7 minutes per side.
  4. Remove the chicken and set aside.
  5. Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.
  6. Stir in the minced garlic and cook for another minute until fragrant.
  7. Add the pepperoncini peppers and their juice, then pour in the chicken broth.
  8. Bring to a simmer, allowing flavors to meld for a few minutes.
  9. Return the chicken to the pan, cover, and simmer for about 10-15 minutes.
  10. Stir in the heavy cream and red pepper flakes.
  11. Serve the chicken over cooked pasta or rice, garnished with fresh parsley.

Notes

Rest the chicken after cooking for juicier pieces. Adjust spice levels according to preference.
