- 4 pieces Boneless, skinless chicken breasts (or chicken thighs)
- 1 cup Pepperoncini peppers
- 1 medium Yellow onion
- 3 cloves Garlic
- 2 tablespoons Extra virgin olive oil
- 1 cup Low-sodium chicken broth
- 1/2 cup Heavy cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon Red pepper flakes
- to taste Salt
- to taste Black pepper
- 1/4 cup Fresh parsley
- 2 cups Cooked pasta or rice
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken with salt, pepper, and Italian seasoning.
- Add the chicken to the skillet and cook until browned, about 5-7 minutes per side.
- Remove the chicken and set aside.
- Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the pepperoncini peppers and their juice, then pour in the chicken broth.
- Bring to a simmer, allowing flavors to meld for a few minutes.
- Return the chicken to the pan, cover, and simmer for about 10-15 minutes.
- Stir in the heavy cream and red pepper flakes.
- Serve the chicken over cooked pasta or rice, garnished with fresh parsley.
Notes
Rest the chicken after cooking for juicier pieces. Adjust spice levels according to preference.
