Ingredients

  • 2 cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes and green chilies
  • 4 cups chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onion and garlic, sauté until translucent.
  3. Stir in the rice, cooking for 2-3 minutes until lightly toasted.
  4. Add the Rotel tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 20 minutes or until rice is cooked and liquid is absorbed.
  7. Fluff with a fork and serve warm.
