Roasted Cherry Brownies

Description

Deliciously rich brownies infused with the sweetness of roasted cherries.


Ingredients

  • 1 cup fresh cherries, pitted and halved
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the pitted cherries on a baking sheet and roast for 15 minutes.
  3. In a mixing bowl, combine melted butter and sugar, then mix in eggs and vanilla.
  4. In another bowl, whisk together flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in the roasted cherries.
  7. Pour the batter into a greased baking pan and spread evenly.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before cutting into squares.

Notes

  • For a richer flavor, use dark chocolate cocoa powder.
  • Store brownies in an airtight container for up to a week.
  • These brownies can be served warm with ice cream for a decadent dessert.
