- 1 cup fresh cranberries (or dried cranberries)
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup orange juice
- 2 large eggs
- 1/4 cup vegetable oil
- 1 tablespoon orange zest
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tray with paper liners.
- Mix together the ricotta cheese, sugar, eggs, orange juice, and vegetable oil in a large bowl until well combined.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the cranberries and orange zest.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow to cool slightly before serving.
Notes
For a sugar-free version, consider using sugar substitutes like stevia or monk fruit. Store muffins in an airtight container; they last about 4 days in the fridge or up to 3 months in the freezer.
