Description
Delicious and easy-to-make raspberry crumb bars with a buttery crust and sweet raspberry filling.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh raspberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together flour, oats, brown sugar, melted butter, baking powder, and salt until crumbly.
- Press half of the mixture into the bottom of a greased 8×8 inch baking dish.
- In another bowl, combine raspberries, granulated sugar, and lemon juice.
- Spread the raspberry mixture over the crust in the baking dish.
- Sprinkle the remaining crumb mixture on top of the raspberries.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.

Notes
- For a sweeter taste, add more sugar to the raspberry filling.
- These bars can be stored in an airtight container for up to a week.
- Try using frozen raspberries if fresh ones are not available.
