Description

Delicious and easy-to-make raspberry crumb bars with a buttery crust and sweet raspberry filling.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, oats, brown sugar, melted butter, baking powder, and salt until crumbly.
  3. Press half of the mixture into the bottom of a greased 8×8 inch baking dish.
  4. In another bowl, combine raspberries, granulated sugar, and lemon juice.
  5. Spread the raspberry mixture over the crust in the baking dish.
  6. Sprinkle the remaining crumb mixture on top of the raspberries.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • For a sweeter taste, add more sugar to the raspberry filling.
  • These bars can be stored in an airtight container for up to a week.
  • Try using frozen raspberries if fresh ones are not available.
