Ingredients

Scale
  • 1 beef tenderloin (about 2 pounds)
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the spinach, cream cheese, sun-dried tomatoes, Parmesan cheese, garlic, salt, and pepper.
  3. Cut a pocket in the beef tenderloin and stuff it with the spinach mixture.
  4. Heat olive oil in a skillet over medium-high heat and sear the beef on all sides until browned.
  5. Transfer the beef to a baking dish and bake in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Let the beef rest for 10 minutes before slicing and serving.

Notes

  • For a more festive touch, consider adding cranberries to the stuffing mixture.
  • Serve with roasted vegetables or a holiday salad for a complete meal.
