Ingredients

  • 1 pre-made pie crust
  • 2 cups pumpkin puree
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1 teaspoon thyme
  • 3 eggs
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the onions and garlic until translucent.
  3. Add the mushrooms and cook until softened.
  4. In a bowl, mix the pumpkin puree, eggs, heavy cream, sage, thyme, salt, and pepper.
  5. Combine the sautéed mushrooms and onion mixture with the pumpkin mixture.
  6. Pour the filling into the pie crust.
  7. Bake for 45-50 minutes or until the filling is set.
  8. Let it cool slightly before serving.

Notes

  • Serve warm or at room temperature.
  • Can be made a day in advance and reheated.
  • Garnish with fresh sage leaves for added flavor.
