A delightful and warming pumpkin curry that captures the essence of fall with its rich flavors and comforting spices.


Ingredients

  • 1 medium pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can coconut milk (400ml)
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onion until translucent.
  2. Add the garlic and ginger, cooking for another minute until fragrant.
  3. Stir in the curry powder, turmeric, and cumin, cooking for 1-2 minutes.
  4. Add the cubed pumpkin and stir to coat with the spices.
  5. Pour in the coconut milk and bring to a simmer.
  6. Cover and cook for about 20-25 minutes, or until the pumpkin is tender.
  7. Season with salt to taste and garnish with fresh cilantro before serving.
